Cabra


Another fiesta. What's a cat to do to get some rest around here. Went to Miguel and Admi's today. They farm goats. Goats are weird, they have a strange look and an even stranger smell. Taste good on the BBQ though and their cheese is quite delicious.

Factoid: Queso de cabra. The making of goat cheese is an acquired skill as well as an art. Goat cheese is rich in calcium, protein, vitamin A, vitamin K, phosphorus, niacin and thiamin.

Hojas verdes con queso de cabra gratinado (Green Leaves with Grilled Goat Cheese)
Ingredients:
11 oz goat cheese
1 tbsp oil
1 bag baby green leaves
Vinaigrette:
1/2 cup virgin olive oil
3 tbsp sherry vinegar
1 tbsp honey
Salt
Pepper

Preparation: Vinaigrette: Dissolve the salt, pepper and honey in the vinegar and beat in the virgin olive oil until an emulsion forms.

Cut the cheese into 3/4 inch slices and grill until golden. Serve onto plates, add the salad and dress with the vinaigrette.
